My way is not the only way. It’s just my own.

There are too many variables in this business for one approach to work for everyone. Different restaurants have different neighbourhoods, budgets, teams, customers, ambitions — and owners who want very different things from their lives.

What I can offer is a way I’ve taken myself. One I’ve tested, made mistakes through, changed my mind about and refined over time.

I’m not here to tell you to build your restaurant like mine.

I’m here to share what I’ve learned, help you look at the problem from another angle, and hopefully make your own path a little clearer.

Who this is for

Independent people building independent places.

I’m most interested in helping owners and operators who actually care about what they’re building.

You don’t need to have everything figured out. You don’t need a giant budget. And your restaurant doesn’t need to look anything like mine.

I care much more about whether you’re thoughtful, open and genuinely trying to build something good.
